A Movement to Restore Health to Humans and the Planet
by Willie Victor
Often the healthiest, most nutrient-dense, and greenest foods you can eat, SOLE food comes to us mostly from farmers markets and local producers, which means they are organic, have no pesticides, use shorter travel miles (less oil) and support local farming communities instead of agribusiness.
Because it’s organic and grown in soil that is healthy, or is raised in such a way as to eliminate chemicals and increase natural, symbiotic growing/feeding systems, there are loads of good nutrients in the food — which is why it tastes really, really good! Nutirents give food its flavor. The more nutrients the better it tastes, the more enjoyable the experience of eating.
We’ve all had those bright red tomatoes from the supermarket that have zero flavor. And we’ve all had the in-season, organic heirloom tomatoes that taste like a long walk in mom’s garden. The difference? More nutrients. The former being farmed in soil that’s been overfarmed, loaded with pesticides and depleted of nutrients. The latter being grown in organic, rich soil full of vitamins, minerals and the good stuff Mother Nature wants us to eat.
Sure SOLE food a bit more costly, but it’s whole, not processed, and rich with the good stuff we’re supposed to be eating. Our body LOVES it!
The alternative way of eating can also be costly. When we eat food that lacks nutrients, we do not feel like we’ve been fed. This means we’re still hungry and eat even more. Unfortunately we go after more empty calories. Because our body is not getting the nutrients it needs to stay strong, we end up compromising our immune systems, we get sick more easily, and it starts a dangerous cycle of illness and lots of trips to the doctor.
So, eating processed foods; foods stripped of nutrients, is expensive as well. The extra costs are paid. The money just goes to a doctor rather than a farmer.
